It’s Shrove Tuesday as I write this. But late in the evening. I’m resting my bloated belly and typing this as Hubby watches a crap sequel movie on TV, I gave un about 20 minutes in after the fourth pathetic cliche and an unbelievable Madam President response to an(other) alien invasion. I’m talking Independence Day-Resurgence, if you haven’t watched it, don’t bother, it’s utter shite.
Anyway, any hopes of digesting my pancake over-indulgence in front of a good movie, is lost, so instead, you get the opportunity to try out my pancake recipe for yourselves as I’m about to share it with you.
Low carb, coconut and banana pancakes
40g coconut flour
1/4teaspoon baking powder
Pinch salt
1small banana
100ml milk (almond, coconut, soya, regular)
1 tbsp golden syrup
2 eggs
Method
Mash the banana and whisk with eggs, milk and syrup. Stir in the flour, baking powder and salt
The mixture should drop of a spoon
Fry in a a little oil as about 3-4inches round (this batch makes 4 pancakes)
I served ours with chopped and fried fresh pineapple and a large scoop of vanilla ice-cream. Fried banana would be great too, or chocolate sauce, or maple syrup or………

Coconut flour? I can definitely eat this, and I’m definitely going to try it–I miss pancakes!
